Menu plan week of 9/2

Well it's a holiday, but for us that means nothing, since my husband always has to work. So nothing planned, no big bbqs, which I'm fine with. But, here the plan for the rest of the week anyway, oh and I'm back to work four days this week so dinners will be a little more rushed.

Mon - BBQ chicken legs, Mac n cheese, salad

Tuesday - hopefully something leftover? Maybe with some fresh hot dogs, and turkey burgers?

Wed - pizza night, catch up around the house

Thurs - chicken salad

Fri - lemon chicken with rice

I may end up moving the chicken salad to Tuesday because I don't want the lettuce to go bad? That's all for now, done a day ahead this week, boy this really is making things much easier.

Sight alteration to this week, I didn't make the roast pork I had planned for sat night, so it got bumped to Monday.

Revised week;

Mon - pork roast

Tues - leftovers, throw something together, it's too hot to turn on the oven

Wed - pizza still

Thurs - those chicken legs before they go bad.

Fri - chicken salad to use up the lettuce

Sat - lemon chicken with rice



Here's what I made for Monday night; I was feeling ambitious!

Store bought rosemary and olive oil marinaded pork tenderloin, covered it with some mandarin oranges and some snips of fresh rosemary I had in the oven, roasted at 350 for about 45 min.

I made a balsamic reduction using just balsamic and dark brown sugar 1:1 ratio heat to melt sugar then reduce on med low heat until thickened. This was drizzled over the roast pork.

For a side I went with a standard, spaghetti with a pesto cream sauce, topped with fresh diced tomatoes I had in the garden.

I wanted to keep it really light so I threw together a spring salad, added so e dried cranberries, sliced almonds, and a can of sliced peaches, and hearts of palm (also just things I had on hand) I tossed the salad in a dressing of olive oil, lemon juice, salt, pepper, and a dash of marjoram.

For dessert I had a box of brownies and a can of puréed pumpkin, so I searched for a recipe in Pinterest, and they were delicious. I only had to make the pumpkin part, then just threw it into the box brownie mix. So simple.
