buffalo recipes

Buffalo dill burgers

i love the flavor of dill on burgers so i added it to this one day, very tasty.

1 package of ground buffalo meat, sold in most supermarkets now
dill i use freeze dried, fresh would be better
mayo
garlic, chopped in the jar or garlid powder works too.

mix buffalo meat with dill and garlic, cook burgers on grill or i use a grill pan inside.  mix together extra dill with mayo for topping on burgers. done.

the buffalo meat is lower in fat than beef and very tasty don't be afraid to try it... next buffalo meat loaf.

Pot Roast:

This recipe was simple and delicious.

1 package of mccormick pot roast for slow cooker mix
2.5 lbs-3 lbs rump or chuck roast
10-12 small red potatoes
2-3 carrots

cube potatoes
peel and slice carrots
throw into crockpot with meat and seasoning packet and water (amount on package)
set on high for 4 hours
done.

delicious, this recipe served four with a couple helpings extra.

Lemon and Onion Stuffed Chicken:

whole roaster chicken with gizzards removed
one onion
two lemons
reynolds oven bags
lawrys lemon pepper seasoning

clean chicken stuff inside one onion cut into cubes, and one or two lemons cut into quarters sprinkle seasoning inside and outside of bird. place in oven bag and cook following instructions on bags. done

this recipe is simple and doesn't take anytime at all to prepare.  cook time is usually about one hour for a small bird for two people.

Garlic Chicken:

one of our favorites from brett's mom.. i adjusted for the fat content.

chicken tenders
extra virgin olive oil
garlic powder or salt


dredged chicken in flour fry in a pan of hot oil until brown, add garlic salt or powder at the end use plenty so it's very garlicy. you could mix in a little butter if you want that flavor.

brett's mom fries in butter only, i'm sure it's tastier but the extra virgin olive oil is much healthier.

this recipe is very simple and takes about fifteen minutes start to finish.

we usually serve with white rice or pasta.
