Got a little sidetracked with halloween decorating, and costume making :) but I've still been planning ahead in my head. But thought I'd refocus a bit and get back to business, with the other holidays quickly approaching it will be helpful, for sure!
Mon-since I'm short on time and groceries to think about tonight it will be pizza!
Tues- usually a leftover night, but I'm short on those too! I'm thinking quesadillas again since the kids loved them? We will see? ( popcorn chicken in the freezer? Hmmm? I'll whip something out of it? )
Wed- I have some frozen chicken in the freezer I need to pull out today for wed night. So if it's defrosted it will be oven roasted with ore genoa nod lemon, with some pasta or maybe rice?
Thursday- meatballs and macaroni
Fri- chicken redo from Wednesday? I know there will be leftover...so? We will be eating it up somehow, not sure yet? Maybe the quesadillas will appear here instead. Crap then what's for dinner tues night? Hmmmmm
Sat- crock pot something so I don't have to worry about it all day :) pot roast maybe?
So with all these meals I will not have to go to the grocery store for anything other than milk, until Friday? Since I don't work we'd nights I will go then and pick up my roast and some things for next week. See no worries. i love menu planning.

Menu plan week of 9/23
I knowing know I'm way behind!!!! It's already Wednesday!
Here's the run down of what's already happened due to my delay!
Mon- pizza
Tuesday- chicken salad after a trip to bjs
Wed- I was going to make chicken on Monday, but didn't have a plan so I defrosted chicken and didn't use it...by now it's probably no good, so I've wasted it, I am currently defrosting another package for tonight! This is exactly why I need to do this and stick to it!
Thurs- ? Macaroni and meatballs
Fri- chicken salad again, because I don't want to think about this again this week! Plus we've been on quite a salad kick later, and I'm not complaining!
Sat- maybe something fancier if I have the time, I think I have a ham in the freezer?
Better luck next week I guess?

Thurs - lemon chicken with white rice
Fri - leftovers or a new vegetarian meal?
Sat - something hearty, and on sale maybe, pot roast?
Simple this week since I picked up a bunch of meat on sale today, makes thing super easy to plan and not a lot of prep work.

Menu plan revamp!
Im Going to try a few different things this coming week.
First, one meatless meal a week, eventually leading up to a full week without meat, just to detox the arteries a bit! Which may be very difficult for me, since my husband is a meat addict? I think I will commit mondays to meatless Mondays. Tuesdays are to remain a leftover meal day, I am still without a proper kitchen and for this I' m determined to order pizza once a week, which is a meatless meal for him, but not for me! but I can easily change that. So that's three nights a week done!
Next I am going to try to plan outside just dinners. I will have to start packing my sons lunches for school next week so I will need to make sure he's getting some variety, which will help to have more variety in my fridge too.
I also will PLAN one big breakfast a week, we eat so crappy for breakfast simply because, well, I hate mornings, I hate cooking in the morning, and I LOVE cereal. My husband should thoroughly enjoy this as long as its on a weekend when he can enjoy it. I would like to make some items that can be frozen and used throughout the week for quick breakfast as well. Wish me luck.
And lastly I NEED to eat more fruit and vegetables, I have a habit of buying them for my kids (mostly organic) and not eating any myself in fear that I won't have them for them! That needs to change.

Menu plan week of 9/9
My son starts school tomorrow, so I'd like to do something special, but haven't had the time to think about it....?
So for tonight ...
Mon - pizza!! Along with ironing, and getting ready for pictures and a rush out the door in the morning!
Tues - something ending with a cupcake? Maybe pancakes for dinner, that he would love!
Wed - it's supposed to be HOT so something light, chicken salad maybe?
Thurs - leftovers before they go bad.
Fri - cooler temps so maybe a hearty meatloaf.
Sat - pasta with pesto (gotta use that up too before it is no good, and I have some fresh tomatoes that should be ripe by then! ) with chicken.
So for tonight ...

Menu plan week of 9/2
Well it's a holiday, but for us that means nothing, since my husband always has to work. So nothing planned, no big bbqs, which I'm fine with. But, here the plan for the rest of the week anyway, oh and I'm back to work four days this week so dinners will be a little more rushed.
Mon - BBQ chicken legs, Mac n cheese, salad
Tuesday - hopefully something leftover? Maybe with some fresh hot dogs, and turkey burgers?
Wed - pizza night, catch up around the house
Thurs - chicken salad
Fri - lemon chicken with rice
I may end up moving the chicken salad to Tuesday because I don't want the lettuce to go bad? That's all for now, done a day ahead this week, boy this really is making things much easier.
Sight alteration to this week, I didn't make the roast pork I had planned for sat night, so it got bumped to Monday.
Revised week;
Mon - pork roast
Tues - leftovers, throw something together, it's too hot to turn on the oven
Wed - pizza still
Thurs - those chicken legs before they go bad.
Fri - chicken salad to use up the lettuce
Sat - lemon chicken with rice
Here's what I made for Monday night; I was feeling ambitious!
Store bought rosemary and olive oil marinaded pork tenderloin, covered it with some mandarin oranges and some snips of fresh rosemary I had in the oven, roasted at 350 for about 45 min.
I made a balsamic reduction using just balsamic and dark brown sugar 1:1 ratio heat to melt sugar then reduce on med low heat until thickened. This was drizzled over the roast pork.
For a side I went with a standard, spaghetti with a pesto cream sauce, topped with fresh diced tomatoes I had in the garden.
I wanted to keep it really light so I threw together a spring salad, added so e dried cranberries, sliced almonds, and a can of sliced peaches, and hearts of palm (also just things I had on hand) I tossed the salad in a dressing of olive oil, lemon juice, salt, pepper, and a dash of marjoram.
For dessert I had a box of brownies and a can of puréed pumpkin, so I searched for a recipe in Pinterest, and they were delicious. I only had to make the pumpkin part, then just threw it into the box brownie mix. So simple.

Menu plan week of 8/26
Ok so I'm a few days late but it's only because I've been so busy with all our projects around the house, so it's a good thing. So here it goes.
Monday - buffalo chicken salad
Tuesday - this will be my pizza night this week, less to clean up and I have a visitor coming in the morning. Oh yeah and no leftovers since we didn't do a big dinner on Sunday.
Wednesday - lemon chicken and rice
Thursday - chicken Marsala with penne Alfredo, I think I will even cook the chicken altogether on Wednesday?
Friday - lets keep it simple, another chicken salad, don't want the lettuce to go bad.
Like I've said before I have a million things going on at home, bathroom needs finishing, the porch project is in full swing, I still have bins full of little clothes in my upstairs hall that need to go away! Painting, painting, and more painting. Oh and I still have no official kitchen (hence the reason I have pizza once a week!) it's just studs and some make shift countertops, oh and my appliances are in my dining room, sounds fun right? All in due time.
Anywho, that's it for this week in a nut shell. Hope this helps someone who may be without a kitchen, keep it simple, your family won't really care if you have the same meals every week for a month or so, and everyone loves pizza around here. Once fall really hits ill be making some crockpot meals to help.
